Biosensores enzimáticos electroquímicos en la industria alimentaria

Abstract

Los biosensores enzimáticos electroquímicos son dispositivos analiticos con gran potencial en la industria alimentaria, gracias a su especificidad, alta sensibilidad y posibilidad de automatización y miniaturización. Es una herramienta útil para el análisis de la calidad de los alimentos, la seguridad de éstos y del control de procesos alimentarios, pudiendo trazabilizar cualquier problema existente en cada uno de ellos. Por ese motivo existe un elevado número de publicaciones sobre este tema aunque no se dispone de muchos biosensores comerciales a causa de problemas de estabilidad , tiempo de vida corto e interferencias. En este trabajo se ha realizado una revisión bibliográfica de biosensores enzimáticos amperométricos para el análisis de alimentos desarrollados en los 10 últimos años, pudiéndose utilizar en un futuro dentro de la industria alimentaria.
