Abstract

Nel presente lavoro sono stati rilevati i parametri gestionali adottati in 25 allevamenti di capre della Valle Camonica e le caratteristiche igieniche e compositive del latte in essi prodotto. Nel periodo maggio-agosto 2003 sono stati prelevati 140 campioni di latte crudo, in seguito caratterizzati per i principali parametri igienico-sanitari (carica batterica totale e cellule somatiche), chimici (grasso, proteine e lattosio) e chimico-fisici (pH e acidità di titolazione). Ulteriori indagini hanno riguardato la determinazione della composizione acidica del grasso del latte, anche in riferimento al contenuto in CLA. Mediamente, la carica batterica totale è risultata pari a 106.000 UFC/ml, mentre la maggior parte delle aziende ha prodotto latte con un elevato livello di cellule somatiche, mediamente superiore a 1.000.000 cellule/ml. Le caratteristiche compositive medie del latte (grasso 3,38% p/v, dev. st. 0,63; proteine 3,08% p/v, dev. st. 0,22; lattosio 4,60% p/v, dev. st. 0,24) risultano sovrapponibili a quelle del latte caprino prodotto in simili contesti ambientali della Lombardia. Le diverse tipologie di alimentazione e stabulazione del bestiame adottate nelle aziende studiate determinano importanti variazioni del livello di CLA del grasso del latte, risultato complessivamente compreso tra 0,4 e 1,3% degli acidi grassi totali. Come atteso, tale livello aumenta significativamente nel latte prodotto in alpeggio. Inoltre, nelle stesse condizioni di alimentazione del bestiame, il livello di CLA è positivamente influenzato dall ́altitudine della zona di pascolo e/o fienagione

n the present work the main aspects of goat farming in Valle Camonica were evaluated and some compositional and hygienic parameters of goat raw milk were determined. From May to August 2003, 140 samples of milk were collected at 25 farms and analyzed for bacterial count, somatic cell count, pH, titratable acidity and fat, protein and lactose contents. Further investigations concerned fatty acid composition of milk fat, including CLA content. The bacteria count was 106,000 CFU/ml on average and the somatic cell count of milk from most of the farms was more than 1,000,000 units/ml. The mean contents of fat (3.38% w/v, SD 0.63), protein (3.08% w/v, SD 0.22) and lactose (4.60% w/v, SD 0.24) were comparable to the ones reported for goat milk produced in other mountain regions of Lombardy. The CLA content of milk fat was largely influenced by farming and feeding conditions. The CLA level resulted in the range 0.4-1.3 % total fatty acids and, as expected, the highest levels were recorded in milk from goat fed on pasture during summer. Under the same farming conditions, the higher was the altitude of pasture the higher was the CLA content of milk fat
