Potencial funcional de chocolates oscuros enriquecidos con subproductos de berries y aceite de sacha inchi (Plukenetia huayllabambana sp. nov)

Abstract

Estudiamos el efecto de incorporar subproductos de aguaymanto (Physalis peruviana), mora (Rubus ulmifolius) y sauco (Sambucus peruviana) en tres concentraciones 2, 6 y 10%, aceite de sacha inchi en tres concentraciones (CSIO) 1, 3 y 5% y tres tiempos de conchado (TC) de 16, 20 y 24 horas, sobre el potencial funcional de los chocolates oscuros, para esto se optimizó las condiciones del proceso a través de la metodología de superficie de respuesta (RSM). Se evaluó las propiedades físicas y químicas, en el chocolate con subproductos de sauco al 7.7%, 1% de CSIO y 16 horas de TC, obtuvimos valores (54.53; 23.28 en puntuaciones pronosticadas para la actividad antioxidante DPPH y ABTS respectivamente), aumentando significativamente con respecto a los otros dos chocolates con subproductos de mora y aguaymanto. Para el TPC el chocolate con subproductos de sauco al 10%, CSIO al 5% y 16 horas de TC, se obtuvieron las puntuaciones más altas de 25.25 con respectos a los otros dos chocolates con subproductos de mora y aguaymanto. Por el contrario, la menor viscosidad plástica de Casson, lo obtuvo el chocolate con subproductos de aguaymanto al 2%, 3.02% de CSIO y 24 horas de TC con un valor de 2.24, con respectos a los otros dos chocolates con subproductos de mora y sauco, De igual forma, la menor dureza y PSD se obtuvo con el chocolate con subproductos de aguaymanto (2.45; 14.64, 5%de CSIO y 16 horas de TC, con valores de 5.52; 14.64 en puntuaciones pronosticadas respectivamente), con respecto a los otros dos chocolates con subproductos de mora y sauco. Además, la correlación de los factores declarados frente a las variables fue alto muy cercano a 1, indicando confiabilidad de los chocolates oscuros.
