Este libro busca dar a conocer el control óptimo de calidad del chocolate, con el propósito de que los cacaocultores, las cooperativas agrarias y las empresas incluidas en la industria chocolatera obtengan un producto de calidad, satisfaciendo las necesidades de sus clientes, pero que también permita cubrir las demandas de los actores involucrados en el sistema de valor productivo-comercial del cacao, quienes a partir del prestigio ganado por la calidad de su producto, mejorarán sus niveles de vida y potenciarán la notoriedad de este fruto prehispánico.
