Abstract

El objetivo del presente documento es establecer los principios, criterios y requisitos para las buenas prácticas de manipulación de alimentos en los servicios y unidades de nutrición de las IPRESS de EsSalud con la finalidad de contribuir a mejorar las condiciones higiénicas y de inocuidad en todos los procesos de manipulación y producción de alimentos y formulas enterales y lácteas, en los servicios y unidades de nutrición de las IPRESS de EsSalud en condiciones de normalidad y en emergencias sanitarias, a fin de minimizar cualquier riesgo de contaminación para proteger la salud de los usuarios internos y externos.
