Abstract

Desarrollo de las experiencias tendientes a la creación de una tecnología propia o adaptación de tecnologías foráneas más convenientes para nuestras principales especies hidrobiológicas. Por esta razón se hicieron experimentos de ahumado en caliente de machete, jurel, lisa, sardina y anchoveta, para lo cual se ha construido un ahumador que, entre otras características, destaca la sencillez de su operación, fácil transporte y bajo costo.
