Cinética de la degradación del ácido ascórbico durante la deshidratación del Aguaymanto (Physalis Peruviana I.)

Abstract

El objetivo de esta investigación fue determinar el efecto de la temperatura sobre la cinética de la degradación del ácido ascórbico durante la deshidratación de aguaymento (Phisalis peruviana l.), a tres temperaturas de 60,70 y 80 °C, para esto se asumió la concentración de ácido ascórbico (vitamina C) como índice de calidad nutricional, de tal manera se escoja la temperatura con menor perdida. El proceso de deshidratación de aguaymanto se llevó a cabo en un deshidratador experimental de bandeja giratoria con aire caliente, de este proceso se ha determinado que la velocidad del aire no afecto en la perdida de perdida de la vitamina C. La determinación de la concentración de ácido ascórbico durante el proceso de deshidratación se realizó empleando el método 2,6-diclorofenolindofnol. Los parámetros cinéticos se determinaron utilizando el programa Excel. De acuerdo a las pruebas experimentales realizadas se determinó que la degradación térmica del ácido ascórbico siguió una cinética de primer orden.
