Propiedades funcionales y compuestos bioactivos de la harina de papa nativa (Solanum tuberosum)

Abstract

El objetivo del trabajo fue evaluar las propiedades funcionales y los compuestos bioactivos de la harina de papa nativa (Solanum tuberosum). Fueron analizadas papas nativas coloreadas de las variedades Leona, Winqu, Amachi y Muru Millcu, las cuales procedieron de los productores de papa del Centro Poblado de Champaccocha, Andahuaylas, Apurímac; las papas fueron precocidas a 105°C y 10 psi y se extrajo harina de papa por secado a 60°C y tamizado a 250 µm. Se determinó la materia seca, propiedades funcionales como Absorción de agua (IAA), Solubilidad en agua (ISA), poder de hinchamiento (PH), Claridad de pasta (CP), Temperatura de gelatinización (TG), Viscosidad aparente (V) y color L* a* b*, el contenido de antocianinas se determinó a través del método pH diferencial, y fenoles totales por espectrofotometría con el reactivo Folin Ciocalteu, los análisis se realizaron por triplicado; las variables se ajustaron a un DCA y los datos fueron analizados a través de un ANOVA y test Tukey al 5% de significancia, asimismo se observó que el para el color, la luminosidad L* se incrementó significativamente en la harina de papa, mientras que el croma a* tuvo tendencia al rojo y el croma b* alta tendencia al azul, del mismo modo se observó que el Índice de color (IC) y el índice Amarillo-Azul (IA) muestra una tendencia marcada al violeta intenso, mostrando alta diferencia de color (ΔE) en comparación a la papa fresca, de esta manera las harinas de papa extraídas presentan buenas característica funcionales y poseen valor nutraceútico considerable.
