Abstract

Mediante este trabajo se desarrolla una nueva alternativa en la elaboración de refrescos instantáneos, presentado la elaboración de refresco en polvo para diabéticos con vitaminas sabor a granadilla, utilizando edulcorantes, saborizantes, colorantes, acidulantes y mix de vitaminas autorizadas por las autoridades competentes del país, los ingredientes son pesados cuidadosamente para luego ser mezclados hasta obtener una mezcla en polvo homogénea, luego es dosificado el producto en envases unitarios con el peso deseado; de tal forma que al disolverse en el agua para ser bebido, proporcione sabor, color, textura y turbidez que permiten al consumidor disfrutar de una bebida refrescante a su gusto. Para la elaboración del producto se consideró las características fisicoquímicas, microbiológicas y organolépticas las cuales deben cumplir un producto terminado según la normativa nacional e internacional, así como las instalaciones sanitarias y sus controles.
