Abstract

Citrus aurantifolia (limón) juega un rol importante en la vida diaria de los peruanos, su función principal es condimentar como especia a los alimentos y bebidas. Por su alto grado de acidez, también es conocida su efectividad contra organismos patógenos del género Vibrio, los cuales pueden ser susceptibles a niveles bajos de pH; sin embargo se ha reportado la presencia de los enteropatógenos Vibrio Cholerae y Vibrio parahaemolyticus en platos marinados (ceviches) expendidos en la vía pública; así también se tienen reportes de su presencia en muestras de pescado, moluscos y crustáceos procedentes de terminales pesqueros. En la actualidad se desarrollan pruebas microbiológicas para la evaluación In Vitro de agentes bacteriostáticos o bactericidas naturales. El objetivo del presente estudio es evaluar el uso del zumo de Citrus aurantifolia como agente natural bacteriostático o bactericida contra Vibrio Cholerae 01, El Tor, Inaba y Vibrio parahaemolyticus, cuyas cepas fueron proporcionadas por el Instituto Nacional de Salud - INS. Para realizar el estudio se utilizó la prueba de Dilución en caldo (Macrodilución), cuyo principio es determinar la concentración mínima inhibitoria (CMI) o la concentración mínima bactericida (CMB) y el Método del Cargador el cual consiste en enfrentar el agente bacteriostático (Citrus aurantifolia) con una carga microbiana determinada adherida a un cargador, en este caso el músculo de pescado. Los resultados mostraron que tanto para Vibrio Cholerae 01 como para Vibrio parahaemolyticus la concentración mínima bactericida (CMB) fue de una dilución 1:16 a un pH de 4.4 y 4.5 respectivamente. En la prueba del cargador fueron necesarios un tiempo de exposición de 15 min mínimo para eliminar al 100% a ambos Vibrios impregnados en el músculo de pescado.
