Investigación y uso de fitasas en avicultura

Abstract

Los principales productos finales de la avicultura son carne de pollo y huevo para el consumo humano, lo que exige, aparte de los rendimientos financieros, el desarrollo de estrategias que garanticen la seguridad alimentaria y la disminución del impacto ambiental. Teniendo en cuenta que muchas investigaciones reportan que el uso de las fitasas en la dieta de monogástricos es una actividad amigable con el medio ambiente y compatible con la rentabilidad, la presente actualización pretende recopilar los datos más significativos generados en los últimos años con la finalidad de identificar los principales factores del desempeño productivo que son afectados positiva o negativamente por la actividad fitásica endógena o microbial y las razones fisiológicas por las que se ha calificado dicha actividad como un elemento promisorio que reduce los costos medioambientales generados por la industria avícola. La mayoría de las investigaciones consultadas coinciden en obtener resultados favorables en ganancia de peso, porcentaje de producción de huevo y disminución de fósforo (P) en las excretas al adicionar fitasas a dietas deficientes en fósforo no fitásico (por sus siglas en ingles npp); no obstante, la conversión alimenticia, el peso del huevo y la densidad específica de este no presentan relación con la adición de fitasas en las dietas.
