Caracterización del estado actual de las áreas de higiene y seguridad industrial del subsector carnes de la ciudad de Pasto

Abstract

En Pasto, los expendios de carne no cuentan con las normas mínimas sobre higiene y seguridad industrial contempladas en un programa de salud ocupacional; los propietarios presentan bajos niveles de educación y capacitación, lo que impide el desarrollo de la economía en la región; por tanto, es de gran importancia conocer el estado actual de los expendios de carne sobre las áreas de higiene y seguridad industrial. Son numerosos los beneficios que se obtienen al implementar los subprogramas de higiene y seguridad industrial; entre ellos se logra que los expendios de carne tengan una herramienta para mejorar la calidad de sus productos y de esta manera, consigan mantenerse competitivos en el mercado. Motivados por este problema, los autores en el 2011 desarrollaron la investigación “Caracterización del estado actual de las áreas de higiene y seguridad industrial del subsector carnes en la ciudad de Pasto”, con la participación de docentes y estudiantes del grupo de investigación “Eslinga” del programa de Ingeniería Industrial de la Universidad Cooperativa de Colombia, sede Pasto. La investigación permitió identificar claramente las principales debilidades en cuanto a la higiene y a la seguridad industrial presentes en el subsector carnes; finalmente los autores proponen estrategias para el mejoramiento de los expendios de carne en Pasto con el fin de dar un servicio de calidad a los usuarios. 

In the city of Pasto, butcher shops do not have industrial safety and hygiene regulations. The owners of these establishments have low levels of education and training, which hampers the development of the region’s economy. It is thus of great importance to assess the current state of industrial safety and hygiene areas. There is a number of benefits that can be obtained from the implementation of hygiene and safety subprograms, since butcher shops improve their products and can remain competitive in the market if this is done. These observations motivated the research project “Characterization of the current state of industrial safety and hygiene areas in the meat production sector of Pasto city”, in 2011. The project was undertaken with the participation of teachers and students from the “eslinga” research group of the Industrial Engineering Program of the Universidad Cooperativa de Colombia at Pasto. The research allowed us to clearly identify the main weaknesses present in the meat production industry concerning industrial safety and hygiene; this will promote the improvement of said conditions and the service that can be provided for the community.
