Abstract

Salmonella spp. es una enterobacteria presente en gran cantidad de animales y con gran capacidad de resistencia en el ambiente. Esta bacteria tiene gran importancia en salud pública, siendo la segunda zoonosis con mayor frecuencia en la UE, solo por detrás de la campylobacteriosis. Históricamente, la mayoría de las salmonelosis han sido transmitidas a humanos por huevos y productos derivados de las aves, siendo este primero el responsable del 45% de los casos en humanos. Esto se debe a que los serovares más frecuentes en humanos, responsables del 73,3% de los casos, son los más prevalentes en gallinas ponedoras y reproductoras, como son S. Enteritidis, S. Typhimurium, S. Typhimurium en su variante monofásica. Por todo esto, la UE lanzó en 2003 el Reglamento (CE) N.º 2160/2003 para el control de Salmonella spp., y a partir del cual todos los países elaboraron planes de control propios que marcaron los objetivos y las medidas legales a seguir en cada tipo de producción avícola. La aplicación de estos planes junto con las medidas de bioseguridad, limpieza y desinfección y controles oficiales y autocontroles, han conseguido alcanzar los objetivos marcados frente a determinados serovares de Salmonella spp. Todo esto acompañado de la vacunación, que ha cambiado y mejorado a lo largo de los años, y hoy se fundamenta como uno de los pilares en el control de este patógeno. Además, nuevas herramientas de control como los bacteriófagos parecen aportar buenos resultados en la desinfección de instalaciones.

Salmonella is an enterobacterium present in a large number of animals with great resistance capacity in the environment. This bacterium is of great importance in public health, being the second most frequent zoonosis in the EU, only behind campylobacteriosis. Historically, most salmonellosis cases in human have been transmitted by eggs and bird-derived products, the former being responsible for 45% of cases in humans. This is due to the fact that the most frequent serotypes in humans, responsible for 73.3% of cases, are the most prevalent in laying and breeding hens, such as S. Enteritidis, S. Typhimurium, S. Typhimurium in its monophasic variant. For all this, the EU launched Reg 2160/2003 for the control of Salmonella spp., and from which all countries developed their own control plans that set the objectives and the legal measures to be followed in each type of poultry production. The application of these plans together with the biosafety, cleaning and disinfection measures and official controls and self-controls have achieved the objectives set against certain Salmonella serotypes. All this accompanied by vaccination, which has changed and improved over the years and today is founded as one of the pillars of the control of this pathogen. In addition, new control tools such as bacteriophages seem to provide good results in the disinfection of facilities
