Propiedades nutricionales en las variedades tradicionales de acelga de la Comunidad Valenciana

Abstract

La acelga (Beta vulgaris var. cycla) ha formado parte de la gastronomía mediterránea desde épocas históricas, donde se ha usado en la elaboración de platos tradicionales. Las variedades tradicionales constituyen un recurso fundamental para garantizar la seguridad alimentaria al promover la biodiversidad agronómica y el cultivo de hortalizas adaptado a cada región de consumo. La acelga ha demostrado un gran potencial preventivo frente enfermedades cardiovasculares o cognitivas gracias a los efectos protectores atribuidos a componentes como los carotenoides, fenoles o vitaminas. Con el objetivo de proporcionar información relevante sobre la calidad de 12 variedades tradicionales de acelga valenciana, este estudio analiza diferentes parámetros de interés nutricional (capacidad antioxidante y concentración de clorofilas, carotenoides y nitratos) en penca y en hoja, en comparación con 2 variedades comerciales. Los resultados muestran diferencias significativas entre hoja y penca para la mayoría de los parámetros estudiados y variedades, con valores más bajos en penca. Ninguna de las variedades tradicionales ha destacado consistentemente por encima de las variedades comerciales en su capacidad antioxidante, o en su concentración de clorofilas y carotenoides, teniendo una calidad similar o inferior a estas. En el caso de los nitratos, sí que hay variedades tradicionales que han destacado frente a las comerciales por su menor contenido, como la AG4 y AG5, lo cual las hace más adecuadas para la preparación de alimentos infantiles. Las variedades tradicionales valencianas albergan un alto grado de diversidad que permite seleccionar aquellas que mejor se adapten a la climatología de la región, lo cual las convierte en una alternativa interesante ante los estreses bióticos y abióticos derivados del cambio climático.
