Abstract

La importancia de obtenerv aredades que produzcan un elevado porcentaje de granos enteros, en el proceso de elaboración, no necesita ser subrayada dada su repercusión económica. Un tratamiento eficaz del tema en un programa de mejora presenta dificultades que consideraremols a la luz de algunos resultados de investigación. Por otra parte se dan en el mercado español particularidades que afectan al problema. Es evidente que las roturas durante la elaboración dependen además de aspectos puramente agronómicos, en particular del momento de la recolección de una variedad y, que el resultado final depende también de las técnicas de secado y elaboración. Estos temas puramente industriales no son considerados aquí. Si nos limitamos a evaluar muestras procedentes de ensayos de producción cosechadas cuidadosamente, los resultados dependerán fuertemente de la climatología. Una serie de años buenos puede ocultar la fragilidad potencial de una línea y, cuando un mal año la ponga de manifiesto, habremos perdido en gran parte la oportunidad de efectuar una selección dentro de ella. Por otra parte los molinos clásicos de laboratorio están diseñados para trabajar con muestras demasiado grandes para proceder de una sola planta. El momento de toma de la muestra, su tratamiento y secado posterior, su tamaño y el método evaluación de su fragilidad son factores que afectanla fiabilidad de los resultados.
