The innovation process, product and organizational developed in the Italian citriculturehave been - in the last two decades (1990-2010) - many and varied, even in response tochanges in the system of prices of products and factors, to become incessanttechnological progress, changes in eating habits of the consumer, to changes arisen inpublic actions for the citrus, with reference to policies and market price support,structural policies and the commercial ones. The purpose of this paper is to summarizethe results of research aimed to identifying the main innovations permanently incitriculture, in the last twenty years, and to evaluate the corresponding economic effects,however, narrowing the scope of the analysis to only the production phase
