Abstract

Ce rapport porte principalement sur la microbiologie, la chaîne biochimie des aliments et des eaux au terme d'un stage d'un mois effectué au Laboratoire de Sécurité Alimentaire et d'Hygiène de l'Environnement (LSAHE) de l'Institut Pasteur de Dakar. Nous avons donné quelques notions générales sur: (1) les différents germes recherchés dans: - le poisson (frais ou transformé); germes capables d'altérer la qualité marchande du poisson (la flore totale à 30 ° C); - germes potentiellement pathogènes (ASR, Salmonellea, Staphylococcus); - germes témoins de contamination fécale (coliformes fécaux); - germes indicateurs technologiques (coliformes totaux entérobactéries). (2) l'eau et la glcae: - germes capables d'altérer la qualité marchande de l'eau (la flore totale à 22 ° C et à 37 °C); - germes potentiellement pathogénes (ASR, Salmonellea, Staphylococcus); - germes témoins de contamination fécale (coliformes fécaux, strptocoques). (3) la méthode de KHAJDHAL sur le dosage des protéines dans la farine du poisson.
