Conservazione del Tartufo

Abstract

La conservazione del tartufo bianco a peridio liscio è contraddistinta da prolblematiche estremamente differenti rispetto a quelle caratterizzanti i tartufi neri a peridio verrucoso. In etrambi i casi è però emerso che il confezionato migliore è in vasetti di vetro sterili di picole dimensioni , ciò permette di ridurrela perdita sia di aroma e sia di acqua e quindi contenere il calo peso.
