The objective of this study was to predict the effects of hen age, storage time and condition on egg weight (EW) and Haugh unit (HU) in table eggs with variance component and logistic regression analysis. In the study, a total of 712 table eggs that were obtained from two commercial layer herds aged 28 and 80 weeks (Lohmann White) were used. One part of these eggs (332) were stored in open area and another part (380) was stored as packaged with stretch film at a temperature of 21.77o C, relative moisture of 45.13% and in these storing periods of 0, 15, 30 and 45 days. In the estimation of variance components, it was determined that 43.44% of the total variation related to HU was explained by storage time and 72.14% of total variation pertinent to the EW was explained by hen age. In the logistic regression analysis, it was determined that the probability to obtain Class A eggs in relation to HU was higher in those whose storage time was zero day by 194.87 times compared to those whose storage time was 45 days. In addition to this, it was observed that as hen age decreased, the probability to obtain small eggs ( 52g) instead of large eggs (63g) increased by 1182.71 times. The results indicate that groups relevant to HU and EW were classified successfully by especially the logistic models.
