Investigations of the colour of fruit flesh in some kiwifruit species

Abstract

Frutti di alcune selezioni e cultivar di A. deliciosa, A. chinensis e A. macrosperma e di due particolari varietà botaniche caratterizzate dal colore rosso della polpa, A. deliciosa var. coloris e A. chinensis var. rufopulpa, sono stati scelti per l'esecuzione delle indagini e per la determinazione dei diversi pigmenti. La scelta dei frutti di queste specie è stata determinata dalla diversa colorazione raggiunta alla raccolta: polpa di colorazione verde (A. deliciosa), polpa di colorazione gialla (A. chinensis), polpa di colorazione arancione (A. macrosperma), polpa di colorazione rossa (A. deliciosa var. coloris e A. chinensis var. rufopulpa). Le diverse colorazioni sono risultate collegate alla presenza di clorofille, antociani e carotenoidi riscontrabili in diversa misura durante lo sviluppo del frutto. Sono altresì riportati e analizzati i risultati relativi all'evoluzione del colore in pre- e in post-raccolta e l'influenza esercitata dalla luce e dalla temperatura di conservazione adottata sull'intensità di colrazione raggiunta dai frutti di una selazione di A. macrosperma
