Abstract

È stata effettuata una ricerca finalizzata alla identificazione dei compo sti responsabili dell'aroma caratteristici del salame Milano e della mortadella. Sóno stati analizzati 13 campioni di mortadella e 8 di salame Milano appartenenti a marchi commerciali diversi. I risultati ottenuti hanno messo in evidenza un certo grado di somiglianza tra i due prodotti quanto a composti volatili separati ed identificati. Le diffe renze concemono gli esteri, riscontrati quasi esclusivamente nel salame, i terpeni, più abbondanti nella mortadella, mentre gli alcoli, le aldeidi e i composti solforati sono più rappresentati nel salame.
