This article is a brief summary of the evolution of Chinese culinary art (in its regional varieties), culinary philosophy and culinary science, including the origin of nutritional medicine which, in China, was based on cosmogonic theories. The importance of proper nutrition was stressed by Chinese traditional medicine, and all kinds of food were studied and classified in pharmacological texts.
L'articolo è una breve presentazione dell'evoluzione della cucina cinese -intesa come scienza, filosofia e arte culinaria- nelle sue varietà regionali, e dell'origine della medicina dietetica, fondata su teorie cosmogoniche. Una corretta alimentazione era prescritta dalla medicina tradizionale cinese, e gli alimenti studiati e classificati nei testi di farmacologia.
