Abstract

En su evolución los humanos fueron adaptándose a las fuentes alimentarias disponibles de la región del planeta donde habitaba y por tanto el ADN de esos sujetos también cambiaba para asimilar de mejor manera esos nutrientes. Con la globalización de la ciencia y la tecnología actual, la disponibilidad alimentaria ha cambiado rápidamente y por lo tanto los hábitos alimentarios cambian, esto afecta a nuestros genes y cuentan con al tiempo suficiente para adaptarse a esos cambios con afectación en la expresión de las rutas metabólicas de transformación esos alimentos nuevos, ante lo cual la Nutrigenómica ha dado algunas respuestas. La Nutrigenómica aplicada tiene un efecto beneficioso potencial para los sistemas de salud pública, al optimizar el servicio personalizado hacia la población. Los nuevos nutriólogos deberán ser formados para cubrir las necesidades de la comunidad conociendo, asimilando y utilizando cada vez más estas nuevas tecnologías.
