Abstract

ÖZET MAKARNANIN KURUMA VE SOĞURMA İZOTERMLERİNİN HESAPLANMASI DINÇER, Tuna Derya Gıda Mühendisliği Bölümü, Yüksek Lisans Tezi Tez Yöneticisi: Prof. Dr. Ali ESİN 80 Sayfa, Eylül 1991 Bu çalışmada, sıfır numara makarnanın 30, 40, 50, 60 ve 70°C'deki kuruma ve soğurma izotermleri elde edilmiştir. Elde edilen veriler BET, geliştirilmiş BET, Henderson, Smith ve Chung-Pfost denklemlerine uygulanmıştır. Net soğurma ve kuruma ısıları Clausius-Clapeyron denklemine göre hesaplanmıştır. Sıcaklığın, yüzeydeki tek sıra nem oranına ve BET denklemindeki sabitlere etkisi araştırılmıştır. Geliştirilmiş BET denklemi, %97 nem oranına kadar, verilere en iyi uyan denklem olarak bulunmuştur. Ayrıca, net soğurma ve kuruma ısılarının sıcaklık ve nem oram arttıkça azaldığı ve tek sıra nem oranının, sıcaklıkla, üslü bir ilişkiye bağlı olarak azaldığı bulunmuştur. ABSTRACT DETERMINATION OF SORPTION ISOTHERMS OF MACARONI DÎNÇER, Tuna Derya Department of Food Engineering, M.Sc. Thesis Supervisor: Prof. Dr. Ali ESÎN 80 Pages, September 1991 In this research, sorption isotherms of thin spaghetti were obtained at 30, 40, 50, 60 and 70 °C. The data were compared with respect to BET, Modified BET, Henderson, Smith and Chung-Pfost equations. Isosteric heat of sorption values were calculated using the Clausius-Clapeyron equation. Temperature dependency of the monolayer value and BET Equation constants were studied. It was found that, the modified BET equation satisfactorily represented the sorption data, upto about 97% relative humidity. Further, the isosteric heat of sorption was decreasing with increasing moisture content and temperature, and the monolayer value was an exponential function of temperature.
