Yeşil çayın antioksidan potansiyeli

Abstract

Bu araştırmada yeşil çayın botanik özelliklerinden, biyolojik aktivitesinden bahsedilmiş bu konularda yapılan çalışmalara ait bilgiler verilmiştir. Günden güne hem çeşitli formları hemde kullanımı artan yeşil çay bitkisinin tarçınlı karanfilli, limonlu, sade ve açık formları olmak üzere 4 çeşit yeşil çayın DPPH yöntemi kullanılarak antioksidan kapasitesine ve toplam fenolik, toplam flavonoit madde miktarlarına bakılmıştır. Etanol ve su ile ekstreleri hazılanan yeşil çay çeşiltlerinin fenolik madde ve flavonoit madde içerikleri değişiklik göstermekle beraber flavonoit madde miktarı en yüksek tarçınlı karanfilli etanol ekstresinde, fenolik madde miktarı en yüksek açık yeşil çay su ekstresinde, antioksidan kapasitesi en yüksek tarçınlı karanfilli etanol ekstresinde bulunmuştur.
