Abstract

Bitkisel uçucu yağlar yiyecek, içeceklerin tatlandırılması, parfüm ve cilt koruyucu kremler gibi kozmetik ürünlerin içeriğinde ve teropatik ajan olarak çok amaçlı kullanılmaktadır.Biberiye, lavanta, okaliptüs ve karanfil gibi çeşitli uçucu yağların antioksidan aktivitesinin bulunduğu yapılan çalışmalar ile rapor edilmiştir. Bu nedenle uçucu yağların antioksidan aktiviteleri araştırmacıların oldukça dikkatini çekmektedir.Bu çalışmamızın amacı, Türkiye'de marketlerde satılan uçucu bitkisel yağların antioksidan kapasitelerinin belirlenmesidir. Kullanılan uçucu yağlar, en çok tercih edilen türlerden seçilmiştir.Bu çalışmada bitkilerden elde edilen 20 çeşit uçucu yağ antioksidan aktivitelerinin tayini için seçilmiştir. Uçucu yağlar 5 farklı marka olarak Türkiye pazarından satın alınmıştır. 100 ürünün antioksidan aktiviteleri üç yöntem kullanılarak tayin edilmiştir. Bu yöntemler: 2, 2 ? -difenilpikril hidrazil (DPPH) serbest radikalini yakalama kapasitesi, troloks eşdeğeri antioksidan tayin (TEAK) yöntemi ve fosfomolibden kompleks (FMK) yöntemidir.Kullanılan yağlar a'dan e' ye olacak şekilde gruplandırılmış (a:en pahalı, e:en ucuz) ve fiyat ile antioksidan kapasite arasında anlamlı ilişki bulunamamıştır. DPPH yöntemine göre en yüksek antioksidan etkiyi papatya, yasemin, karanfil ve kekik uçucu yağları gösterirken TEAK ve FMK yöntemlerinde karanfil ve kekik uçucu yağları göstermiştir. Her üç yöntem için en yüksek antioksidan kapasite gösteren uçucu yağlar karanfil ve kekiktir.

Plant essential oils have been used for many purposes including flavoring foods and beverages, additives for cosmetic products such as perfumes and skin care creams and agent of therapeutic. In addition, discovery of antioxidant activity has been reported in various essential oils such as, rosemary, lavander, eucolyptus and clove. Consequently, antioxidant activity of essential oils has gained considerably attention among researcher and the production of essential oils has been devoloping steadily in the world.In this study, the essential oils derived 20 medical plants were selected for the determination of their antioxidant activity. The essential oils were bought in 5 different brand from Turkish markets. 100 products were examined for their antioxidant activity using three different assay systems; DPPH 2, 2 -diphenyl,1-picrylhydrazyl,ril hidrazyl free radical scavengin activity), TEAC (Trolox equivalent antioxidant capacity) and PC (Phosphomolymdenium complex method).The brands put in a group, named as a to e according their prices (a: the most expensive, e: the most cheapest one) and it is found that, there is no relation among price and antioxidant activity of the essential oils. The greatest scavenging ability of oils for the DPPH radical was found in clove, thyme, chamomille and jasmine essential oils. In both TEAC and PC assays, the greastest ability was in clove and thyme essential oils. Clove and thyme essensial oils show the highest antioxidant activity for the three assay.
