Abstract

El aceite de oliva virgen es un producto muy apreciado por sus propiedades sensoriales y biológicas, que forma parte de la dieta mediterránea. Estas características le dan al aceite un alto valor añadido que es el responsable de que sea susceptible de sufrir adulteraciones por lo que se hace necesario establecer marcadores que permitan evaluar su calidad y autenticidad. Dentro de sus componentes contiene pigmentos clorofílicos y carotenoides que son los responsables de su color. El objetivo de este trabajo es evaluar el papel de las pirofeofitinas como marcadores del aceite de oliva virgen. Las clorofilas son compuestos estables que bajo determinadas condiciones pueden sufrir alteraciones originando compuestos derivados entre los que se encuentran las pirofeofitinas. Las pirofeofitinas aumentan con el tiempo de almacenamiento del aceite, por acción de la temperatura y/o la hidrólisis por lo que han sido propuestos como marcadores para detectar la presencia de aceites desodorizados a baja temperatura en aceite de oliva virgen y como marcadores de calidad entrando a formar parte de algunas regulaciones. En este trabajo se ha llevado a cabo una revisión y actualización de diferentes aspectos relacionados con la calidad del aceite de oliva virgen, se han estudiado las modificaciones de los pigmentos clorofílicos y sus derivados y como se ven afectados a lo largo de la obtención y almacenamiento del aceite de oliva, se ha realizado una revisión de los métodos de análisis de pigmentos clorofílicos y en particular de los empleados en el análisis de pirofeofitinas y, por último, se ha evaluado el posible papel de la pirofeofitina a como indicador de calidad/frescura, encontrándose que el contenido de pirofeofitinas no está relacionado con la calidad organoléptica de los aceites de oliva vírgenes pero sí es un buen indicador de la frescura del aceite.

Virgin olive oil is a product highly appreciated for its sensory and biological properties, which is part of the Mediterranean diet. These characteristics give the oil a high benefit value that is responsible for possible adulterations so it is necessary to establish markers allowing evaluate its quality and authenticity. Virgin olive oil contains chlorophyll and carotenoids pigments that are responsible for its colour. The objective of this work is to evaluate the role of pyropheophytins as markers of virgin olive oil. Chlorophylls are stable compounds that, under certain conditions, can undergo alterations resulting in derivative compounds such as pyropheophytins. The content of pyropheophytins increase with the time of storage of the oil, by the action of the temperature and / or the hydrolysis, reason why has been proposed as marker to detect the presence of deodorized at low temperature oils in virgin olive oil and as markers of quality entering to be part of some regulations. This work reviews and updates different aspects related to the quality of virgin olive oil. The modifications of the chlorophyll pigments, and their derivatives, studied taking into account how they affected during the obtaining and storage of the olive oil. The methods of analysis of chlorophylls pigments revised, in particular, those used in the analysis of pyropheophytins. Finally, the possible role of pyropheophytin a as indicator of quality/freshness has been considered, founding that the content of pyropheophytins is not related to the organoleptic quality of virgin olive oils but it is a good indicator of the freshness of the oil.
