Estudio de la alteración oxidativa del aceite de oliva virgen: compuestos fenólicos

Abstract

El aceite de oliva virgen contiene compuestos fenólicos cuyo contenido varía dependiendo de la zona de cultivo, el clima, la variedad y maduración de la aceituna. Estos compuestos son los que producen las notas sensoriales de amargo y picante y aportan al aceite cierta estabilidad gracias a su destacada capacidad antioxidante. A pesar de esto, el aceite de oliva virgen puede sufrir un proceso de rancidez afectando a su vida útil, valor nutricional y características organolépticas, y cambiando el perfil de los compuestos fenólicos. El análisis mediante cromatografía líquida de alta resolución (HPLC), tras una extracción en fase sólida, permite evaluar la presencia y variación de los compuestos fenólicos a lo largo del tiempo, y utilizarlos como indicadores del proceso oxidativo. El estudio de la alteración oxidativa del aceite de oliva virgen se ha realizado almacenándolo durante 8 meses en condiciones ambientales de temperatura y luz, y realizando un análisis mensual por duplicado. Para ello, se llevó a cabo la preparación de la muestra mediante extracción en fase sólida en fase diol, como técnica de preconcentración de fenoles, para posteriormente ser reconstituidos y analizados mediante HPLC. Paralelamente, se añadieron plantas aromáticas, romero (Rosmarinus officinalis, L.) y albahaca (Ocimum basilicum, L.), al aceite de oliva virgen para estudiar el efecto que producían sobre la variación de la vida útil. Dichas plantas son ricas en volátiles y en compuestos antioxidantes. A lo largo del proceso de almacenamiento, se produce una migración de los compuestos antioxidantes de las plantas hacia el aceite, observándose que el proceso oxidativo se retrasa.
