Abstract

Hoy día se puede afirmar que las células encierran sistemas enzimáticos que catalizan la degradación controlada de los lípidos a través de la secuencia: lipasa, lipoxigenasa y enzimas modificadores de hidroperóxidos. En tejidos animales, la acci& oacute;n de esta ruta enzimática sobre el ácido araquidónico (cascada del ácido araquidónico) da lugar a protaglandinas, prostaciclinas, leucotrienos y tromboxanos, metabolitos con potentes actividades fisiológicas. Las plantas poseen una cascada similar para los ácidos linoleico y linolénico, cuya función fisiológica es comparativamente casi desconocida. No obstantes, existen evidencias que permiten relacionarla con tres grandes áreas de la fisiología vegetal: Crecimiento y desarrollo, senescencia y respuesta a daños físicos o resistencia a enfermedades. Este desconocimiento es en parte debido a la falta de información sobre el mecanismo de acción del enzima llave en este sistema, la lipoxigenasa, y a la incompleta caracterización de los productos de reacción. Esto último es de gran importancia, puesto que dependiendo del metabolito producido, la ruta degradativa o modificadora dará lugar a productos que posiblemente posean funciones fisiológicas diferentes.Antes estos hechos, nos planteamos un estudio de caracterización de isoenzimas de lipoxigenasa de origen vegetal. Las leguminosas son fuentes abundantes de lipoxigenasa, y han sido utilizadas tradicionalmente para trabajos similares. Después de una búsqueda previa de semillas controladas disponibles, se decidió realizar el estudio con semillas de garbanzo (Cicer arietinum), variedad Pedroxillano.El propósito primordial de este trabajo es la obtención de datos experimentales que, sumados a los ya existentes en la extensa bibliografía, contribuyan a una elucidación futura del mecanismo de acc|
