Abstract

En la actualidad, la industria cervecera se encuentra entre los sectores con mayor crecimiento tanto económico como tecnológico y en pleno auge invirtiendo grandes cantidades de dinero, tanto para la mejora de la calidad del producto, como para la reducción de las emisiones al medio ambiente y el consumo energético. Referente a la creación de empleo, es uno de los sectores con mayor crecimiento. En cuanto al proyecto, el principal objetivo se basa en la definición de las diferentes operaciones que ocurren en una industria cervecera, desde que la cebada es recolectada en el campo, se recepciona en las malterías y allí es tratada, así como todos los procesos que ocurren dentro una fábrica de cerveza, molienda de la malta, elaboración en la brewhouse, operaciones de maduración, filtración, carbonatación, pasteurizado y posterior envasado, sin dejar de lado las limpiezas de los equipos y tuberías para garantizar la calidad del producto. En cada una de las operaciones incluyendo parámetros de diseño a cumplir y equipos que intervienen.

At present, the brewing industry is among the sectors with the highest economic and technological growth and in full boom investing large amounts of money both for the improvement of product quality and for emissions with the environment and energy consumption. In terms of job creation, it is one of the fastest growing sectors. As for the project, the main objective is based on the definition of the different operations that occur in a brewing industry, since the malt is collected in the field, is received in the malting plants and there it is treated, as well as all the processes that occur inside a brewery, malt milling, Elaboration in the brewhouse, maturation operations, filtration, carbonation, and subsequent packaging, without neglecting the cleaning of the equipment and pipes to guarantee the quality of the product. All operations including different ranges of parameters involved in them, as well as the equipment involved in each of them.
