Abstract

La Agencia Catalana de Seguridad Alimentaria (ACSA) ha promovido este estudio para obtener datos actualizados sobre los niveles de acrilamida en alimentos de consumo y evaluar la ingesta dietética de acrilamida por parte de la población catalana y evaluar los riesgos para la salud derivados. A partir del análisis del contenido de acrilamida de 33 muestras composite, confeccionadas con 11 tipos de alimentos significativos se concluye que la exposición actual a la acrilamida a través de la dieta está muy por debajo del límite mínimo de confianza para la dosis de referencia, y según el criterio del Comité de Expertos de la EFSA estos niveles de ingesta de acrilamida no suponen ningún riesgo de efecto neurotóxico.

L’Agència Catalana de Seguretat Alimentària (ACSA) ha promogut aquest estudi per tal d’obtenir dades actualitzades sobre els nivells d’acrilamida en aliments de consum i avaluar la ingesta dietètica d’acrilamida per part de la població catalana i avaluar els riscos per a la salut derivats. A partir de l’anàlisi del contingut d’acrilamida de 33 mostres composite, confeccionades amb 11 tipus d’aliments significatius es conclou que l'’exposició actual a l’acrilamida a través de la dieta està molt per sota del límit mínim de confiança per a la dosi de referència, i segons el criteri del Comitè d’Experts de l’EFSA aquests nivells d’ingesta d’acrilamida no suposen cap risc d’efecte neurotòxic.

The Catalan Food Safety Agency (ACSA) has promoted this study in order to obtain updated data on the levels of acrylamide in consumer foods and evaluate the dietary intake of acrylamide by the Catalan population and evaluate the risks to health derived. Based on the analysis of the content of acrylamide of 33 composite samples, made With 11 types of significant foods, it is concluded that the current exposure to acrylamide through the diet is well below the minimum confidence limit for the dose of reference, and according to the criteria of the Committee of Experts of the EFSA these levels Acrylamide intakes do not pose any risk of neurotoxic effects.
