Abstract

Las frutas y hortalizas son alimentos muyimportantes en la dieta del hombre, pues sonuna excelente fuente de agua, minerales, fibras ycompuestos bioactivos tales como polifenoles,carotenoides, tocoferoles y ácido ascórbico, entreotros, los cuales poseen efectos benéficos en lasalud humana. En los últimos años a nivelmundial, ha crecido notablemente, tanto enpaíses desarrollados como en desarrollo, lademanda de frutas y hortalizas frescas y seofrecen en el mercado internacional una ampliavariedad de frutas y hortalizas de IV gama.Estos vegetales han crecido en oferta ypopularidad, asociados no solo a los beneficiospotenciales que tienen para la salud del hombre,sino que intentan satisfacer la demanda deproductos listos para consumir. En este trabajose presentan los principales tópicos relacionadoscon el proceso de elaboración de los vegetalesminimamente procesados y los problemasasociados a su preparación. También se tratanaspectos relacionados a las tendenciasmundiales de comercalización de este tipo dealimentos y cuales son las espectativas por partedel consumidor relacionados a los mismos.
