Isotermas de adsorción de agua en champiñones

Abstract

Se han estudiado las isotermas de adsorción de agua en champiñones en el rango de 30 a 70°C. Se ha utilizado para ello el método estático usando soluciones salinas saturadas para proveer actividades da agua definidas. Se han utilizado nueve ecuaciones diferentes para el ajuste de los datos experimentales, utilizándose el coeficiente de regresión como criterio de bondad del ajuste. Las ecuaciones biparamétricas de Bradley, Chung y Pfost, y Henderson son las que permiten los mejores ajustes. Se ha determinado el calor isostérico neto de adsorción utilizando la ecuación de Clausius-Clayperon. Se observa un incremento significativo de este calor al disminuir la humedad del champiñon.
