Actividad antimicrobiana de la miel de abejas nativas sin aguijón

Abstract

La miel de abejas nativas se destaca por sus propiedades físicoquímicas y por su actividad antibacteriana, la cual se puede atribuir a la acidez, la presencia de componentes fitoquímicos como flavonoides y ácidos ftálicos y a la acción del peróxido de oxígeno, propiedad que podría usarse para enriquecer y/o proteger productos alimenticios. El objetivo de este trabajo fue determinar la acción antimicrobiana de la miel de Tetragonisca fiebrigi con el fin de evaluar su potencial uso como conservante de alimentos, ya sea en la composición del mismo o como componente de una película o film biodegradable. Para ello se determinó el título de la miel pura, expresado en unidades arbitrarias por mililitro (UA/ml), mediante un ensayo de difusión en agar; trabajándose por duplicado. Se emplearon como microorganismos indicadores las siguientes bacterias patógenas o alterantes características de alimentos: a) Bacterias Gram positivas: Listeria innocua ATCC 33090 (Li33), L. innocua 7 (Li7), Staphylococcus aureus ATCC 29213 (Sa29), S. aureus FBUNT (SaT; Facultad de Bioquímica, Química y Farmacia, Universidad Nacional de Tucumán); b) Bacterias Gram negativas: Escherichia coli (Ec). Los resultados mostraron que la miel presentó actividad antimicrobiana sobre el crecimiento de todos los microorganismos estudiados, siendo Sa29 el microorganismo más sensible, presentando una inhibición correspondiente a 400 UA / ml; seguido por Li33 con 200 UA / ml, mientras que Li7, SaT y Ec fueron inhibidos en la dilución correspondiente a 100 UA / ml. Se concluye que la miel de Tetragonisca fiebrigi presentó un prometedor efecto inhibitorio sobre el crecimiento de los microorganismos indicadores estudiados, dejando evidencia científica de su potencial uso en la preservación natural de alimentos, para lo cual se estudiará diferentes composiciones de películas o recubrimientos comestibles para la conservación de frutas y/o panificados.
