La agroindustria azucarera tucumana

Abstract

“Tucumán es azúcar”, versa el slogan que sintetiza con precisión uno de los sellos identitarios de la provincia. Con 200 años de historia, ingenios azucareros y cañaverales moldean el paisaje local y organizan ―directa o indirectamente― el trabajo y la vida cotidiana de buena parte de la población del territorio norteño. Recorrer el devenir de la producción azucarera implica transitar los vaivenes agridulces de una industria que ha motorizado a toda la región y no deja de ampliar sus horizontes
