La industria harinera pampeana durante la gran expansión agraria, 1880-1914: Avances historiográficos y agenda pendiente

Abstract

El trabajo realiza una revisión historiográfica sobre la industria harinera durante su despegue y consolidación, entre finales del siglo XIX y principios del XX. Se revisan los textos de la época, dando cuenta de las diferentes posturas de los actores sectoriales, de los tecnócratas y de los académicos. Luego se analizan los trabajos clásicos sobre el tema -surgidos desde mediados del siglo pasado, que siguen un derrotero similar a las posturas pesimistas del período- y finalmente se da cuenta de los avances generados en las últimas décadas por los estudios históricos. Por último, se exponen algunas cuestiones metodológicas derivadas del propio trabajo de campo haciendo hincapié en los problemas que aún restan resolver para tener un conocimiento más profundo sobre el funcionamiento de la industria harinera de entonces.
