Caracterización físico-química de las semillas de zapallo (Cucurbita maxima Duchesne ex Lam.)

Abstract

Las semillas de zapallo, por lo general, se descartan como residuos vegetales antes de su consumo; éstas contienen importantes cantidades de compuestos nutritivos como lípidos y proteínas que aportan hasta el 80-85% del peso seco del embrión y podrían ser usados para adicionar a alimentos. OBJETIVO: determinar características físico-químicas de las semillas de zapallo. MATERIAL Y MÉTODO: se recolectaron semillas de 45 zapallos del Comedor Estudiantil de la Universidad Nacional de Salta, se lavaron con agua fría y frotaron con malla de polipropileno (1mm) para retirar restos de pulpa. Las semillas enteras (SE) se secaron en estufa a 40±1°C con aire forzado durante 16 horas hasta humedad de 5,7±1,9%, se almacenaron al vacío. Se tomó el largo, ancho y espesor con un calibre de 0,01 cm. En los lotes de SE y SSC (semillas sin cáscara) se determinó humedad por desecación en estufa, proteínas por Kjeldhal, grasas por Soxhlet, carbohidratos por Fehling Causse Bonnans y cenizas por calcinación en mufla a 600ºC (AOAC 1995). RESULTADOS: los valores del largo, ancho y espesor fueron de 19,43±1,55, 10,58±0,80 y 3,85±0,41 mm respec- tivamente. Las SE y SSC presentaron 5±0,0 y 4,5±0,0% de humedad, 37,10±0,74 y 34,13±0,74% de proteínas, 40,39±0,53 y 52,33±0,58% de grasas, 10,26±0,15 y 7,26±0,43% de carbohidratos y 3,62±0,25 y 4,17±0,29% de cenizas respectivamente. CONCLUSIONES: las semillas de zapallo se destacaron por su aporte proteico y lipídico, con potencial para la extracción de aceite.

Pumpkin seeds are generally discarded as vegetable waste before consumption; These contain significant amounts of nutritional compounds such as lipids and proteins that contribute up to 80-85% of the dry weight of the embryo and could be used to add to food. OBJECTIVE: to determine physical-chemical characteristics of pumpkin seeds. MATERIAL AND METHOD: seeds of 45 pumpkins were collected from the Student Dining Hall of the National University of Salta, washed with cold water and rubbed with a polypropylene mesh (1mm) to remove pulp remains. Whole seeds (SE) were dried in an oven at 40±1°C with forced air for 16 hours to a humidity of 5.7±1.9%, stored under vacuum. The length, width and thickness were measured with a caliper of 0.01 cm. In SE and SSC moisture was determined by drying in an oven, proteins by Kjeldhal, fats by Soxhlet, carbohydrates by Fehling Causse Bonnans and ashes by calcination in muffle at 600ºC (AOAC 1995). RESULTS: the values of length, width and thickness were 19.43±1.55, 10.58±0.80 and 3.85±0.41 mm, respectively. The SE and SSC presented 5±0.0 and 4.5±0.0% moisture, 37.10±0.74 and 34.13±0.74% protein, 40.39±0.53 and 52 0.33±0.58% fat, 10.26±0.15 and 7.26±0.43% carbohydrates, and 3.62±0.25 and 4.17±0.29% ash, respectively. CONCLUSIONS: pumpkin seeds stood out for their protein and lipid content, with potential for oil extraction.
