Los vínculos productores-industrias lácteas

Abstract

El propósito general de este capítulo es analizar las particularidades de las relaciones que se establecen entre los productores y las usinas lácteas tanto en un plano general como en un espacio determinado, a fin de comprender los márgenes de maniobra y las estrategias de los actores. Los resultados obtenidos permiten hacer algunas inferencias sobre la influencia de los vínculos agroindustriales en la evolución de la agricultura familiar como sujeto productivo, y aportan elementos en la discusión sobre la capacidad de inclusión de las cadenas agroalimentarias extendidas, que son las que predominan actualmente en la actividad lechera.
