Abstract

El capitulo habla sobre los hábitos alimentarios de los pobladores de la puna a mas de 3000 msnm, ambiente extremo por excelencia. Su gastronomía y alimentos utilizados. En efecto, la obtención y producción de alimentos en relación directa con las condiciones ambientales. Describe la situación nutricional actual de estas poblaciones aisladas de las grandes ciudades de la Provincia de Catamarca, Argentina.
