Abstract

El pulpo colorado patagónico, Enteroctopus megalocyathus, constituye un recurso pesquero artesanal en Argentina y Chile. En Argentina el recurso es habitualmente congelado en freezers y su comercialización ha sido históricamente informal, pero recientemente comenzó a ser comercializado por empresas pesqueras locales. El objetivo de este trabajo fue evaluar el efecto del congelado en la calidad de la carne de E. megalocyathus durante su almacenamiento.
