Composición bioquímica del músculo del pulpo colorado patagónico, Enteroctopus megalocyathus

Abstract

El pulpo colorado patagónico, Enteroctopus megalocyathus, es una especie capturada artesanalmente entre finales de verano y fines de primavera. Esta especie despierta un fuerte interés dada la aceptación de su carne por parte del consumidor. El objetivo de este trabajo fue estudiar la composición bioquímica de la fracción comestible de E. megalocyathus en época de pesca.
