Abstract

Habiendo gran diversidad en los ajos argentinos, tanto por sus características agronómicas como en las gastronómicas y nutracéuticas, parece un despropósito no encontrar estos en las góndolas de los supermercados etiquetados con información simple que le avise al consumidor sobre estas. Una forma rápida de caracterizar las propiedades nutracéuticas y sensoriales de las cultivares de ajo es a través del análisis de sólidos totales (que representan la aptitud de conservación), de piruvatos (que representa el picor) y fenoles totales (que representan la capacidad antioxidante o protección cardiovascular)...
