Abstract

En la molienda, el grano de arroz se descascara y pule para obtener el arroz blanco o elaborado. Durante este proceso el grano puede quebrarse y esto afecta un importante índice de calidad: el rendimiento en grano entero. Tradicionalmente éste se calcula como el porcentaje en peso de la fracción de granos enteros (no quebrados). Se desarrolló un método de análisis de imá- genes que permite evaluar el porcentaje de grano quebrado sobre la base de la cuantificación de las variaciones del área proyectada del grano quebrado respecto del grano entero. Los ensayos se realizaron en un molino arrocero de laboratorio (100 g) cubriendo un rango amplio del porcentaje de grano quebrado (6-100%). Los rendimientos obtenidos mediante imágenes se correlacionaron satisfactoriamente con los del método tradicional, encontrándose correspondencia lineal significativa entre ambos métodos (r2=0,998). En relación al método tradicional, el análisis digital de imágenes presenta algunas ventajas significativas: evita la etapa de separación de granos quebrados y enteros, requiere menor tiempo de proceso y proporciona la distribución de tamaño de los granos en la muestra analizada. Se trata de una alternativa fácil de implementar que redundará en beneficio de la industria arrocera.
