Aguaribay y Arándanos: Principios activos como aditivos alimentarios en aceites

Abstract

Los aceites sufren de modificaciones y procesos oxidativos durante la cocción que pueden tener efectos nocivos en la salud. Esto impulsó el diseño de nuevas metodologías de administración de diversas sustancias activas (como es el caso de antioxidantes) y así retrasar el deterioro de alimentos sin modificar sus propiedades organolépticas ni calidad nutricional. Recientemente se produjo un creciente interés en alternativas naturales en la industria alimenticia y en consecuencia aumentó la necesidad de optimizar la efectividad de los conservantes utilizados. Entre ellos, se encuentran los extractos naturales cuyas propiedades se pueden ver afectadas por condiciones de almacenamiento y aspectos relacionados al procesamiento. Las micropartículas lipídicas sólidas (SLM) pueden ser utilizadas como transportadores de extractos etanólicos de Aguaribay (Schinus molle Linn) y arándanos (Vaccinium myrtillus). Para aplicar el sistema desarrollado se seleccionó el aceite de uva por ser uno de los aceites comerciales más inestables debido a su bajo procesamiento, haciéndolo una matriz alimentaria ideal.
