Abstract

Este capítulo se inscribe en una perspectiva que sostiene que los procesos dereestructuración productiva de la agricultura en su relación con el trabajoimplican el despliegue de estrategias empresariales destinadas a incidir sobre las magnitudes de trabajo que contratan, los tipos de trabajadores que emplean,las modalidades de contratación y los niveles de las remuneraciones, así como los sistemas de pago asociados a las mismas.El propósito de este capítulo es dar cuenta de las formas que asume el trabajo en la vitivinicultura de Argentina ?específicamente en la provincia de Mendoza, la principal productora del país? en el marco de las recientes transformaciones que atraviesa la actividad, considerando las estrategias que las empresas desarrollan para garantizarse el acceso a la fuerza de trabajo necesaria para las distintas tareas que requieren los cultivos. Específicamente resulta de interés el tipo de relación laboral que se establece en producciones restructuradas, teniendo en cuenta las características históricas de los mercados de trabajo de la agricultura y los requisitos actuales que provienen de las transformaciones que afectan a esas producciones.
