Abstract

La leche y los productos lácteos son alimentos que aportan a la dieta nutrientes de alto valor tales como proteínas,fósforo y calcio.Por este motivohan sido considerados siempre como importantes constituyentes de la alimentación humana.Sin embargo,el consumo de estos alimentos ha recibido últimamente unamala propaganda, particularmente con relación a los efectos nocivos para lasalud vinculados con la grasa y los compuestos con ella asociados.A esta publicidad se contraponen trabajos de reciente aparición que resaltan las buenascualidades de estos componentes de la leche,principalmente vinculadas consu acción como agentes anticancerígenos (Parizza,1991;Parodi,1996).Pese a todo,no se puede dejar de reconocer que en los últimos años ha ha-bido un interés creciente por el consumo de alimentos reducidos en grasa,impulsado por las dietas que pregonan la disminución en su ingesta total(Defoliart,1989; Labell y col.,1992; Bullens,1994; Davide,1994; Mann,1994; Britten,1995).Ubicando los hechos en un nivel más balanceado,debería decirse que enlas personas sanas es necesario limitar la ingesta de productos lácteos enterosa valores que no sean la causa de excesos en los compuestos citados,mientrasque los individuos que presentan algún tipo de patología relacionada con elconsumo de grasas y colesterol deben disminuir al máximo o suspender el consumo de este tipo de productos.
