Bioacumulación y biomagnificación de cianotoxinas en organismos acuáticos de agua dulce

Abstract

El presente capítulo constituye una revisión de la bioacumulación de las principales cianotoxinas de interés toxicológico (MCs, CYN, y SAX) en organismos acuáticos de agua dulce de importancia en la salud humana debido de su consumo como pescados, crustáceos, bivalvos y caracoles. Aporta una mirada sobre la exposición humana a las cianotoxinas a través del consumo de alimentos capturados en cuerpos de agua dulce con florecimientos cianobacterianos.Además, se discute la probabilidad de bioacumulación de las cianotoxinas, en el contexto de dos procedimientos específicos, el enfoque de Análisis de Peligros y Control de Puntos Críticos (HACCP sus siglas en ingles) y el enfoque del Plan de Seguridad del Agua de la Organización Mundial de la Salud (OMS). Se puede apreciar que los riesgos de la exposición a cianotoxinas a través de los alimentos son, a veces, subestimados. Finalmente, se abordan aspectos vinculados con la necesidad de actualización de la normativa alimentaria argentina, los niveles máximos permitidos y la metodología analítica utilizada para su detección. Se propone que este tipo de intoxicación alimentaria sea informada y denunciada en forma obligatoria a los efectos de evaluar la real incidencia de esta problemática en nuestro sistema de salud.
