Evaluación de las características reométricas de hidrocoloides obtenidos de semillas de Prosopis sp (algarrobos)
Los galactomananos son muy utilizados en alimentos. Se estudió el comportamiento reométrico del hidrocoloide de algarrobo blanco (prosopis alba) utilizando un viscosímetro Haake Rotovisco con un software desarrollado especialmente. El comportamiento fue similar al de las gomas guar y garrofin.
The galactomanans are very used in foods. Rheometriic evaluation of hydrocolloids extracts obtained from prosopis alba was done using a Haake Rotovisco viscometer with a software developed in our laboratory. Result showed a similar behaviour of dispersion made with guar and garrofin gums.
