Abstract

La deshidratación es una técnica ampliamente utilizada para la conservación de alimentos. El secado al sol de frutas, granos, vegetales y carnes ha sido utilizado para generar una posibilidad de subsistencia en tiempos de escasez. La deshidratación de frutas es un proceso en el cual se extrae el agua que contiene el alimento por medio de la circulación de aire caliente, este proceso detiene el crecimiento de enzimas y microorganismos que se encargan de deteriorar la fruta. Muchos de estos microorganismos se destruyen cuando la temperatura en el deshidratador llega a 60°C. En el caso de las frutas se obtiene un beneficio adicional que es aumentar el nivel de azúcar. Las frutas tienen una vida útil, después de esta se empieza a reducir la calidad del producto y con esto se reduce su posibilidad de venta. La calidad en las frutas debe ser inherente, debido a que tanto el tamaño como el estado del producto, generan impacto visual al consumidor.
