Abstract

Actualmente, los consumidores cada vez están más concienciados en llevar una alimentación sana. Sin embargo, el ritmo de vida actual, no les permite dedicar tiempo para una correcta elaboración. Esto lleva a buscar alternativas alimentarias, sin perder su naturalidad, frescura, y sin adición de aditivos. Por lo tanto, los alimentos de IV gama, son una excelente alternativa, puesto que se comercializan listos para su consumo o necesitan una mínima preparación. Por ello, el objetivo del presente trabajo, consistió en implantar un sistema APPCC (Análisis de Peligros y Puntos de Control Críticos), en una industria de hortalizas mínimamente procesadas, y para hacerlo posible, serán desarrollaron unos prerrequisitos de higiene, unas medidas de control, la determinación y control de los puntos críticos de control (PCC), unas medidas preventivas y correctoras, un sistema de trazabilidad para el control y seguimiento del producto y la creación de un sistema de documentación. Con todo ello, se consigue controlar el sistema de producción, documentación, y por lo tanto, una comercialización segura de las hortalizas de IV gama elaboradas.

Currently, consumers are increasingly aware of healthy eating. However, the current pace of life does not allow them to devote time to proper elaboration. This leads to seek food alternatives, without losing their naturalness, freshness, and without the addition of additives. Therefore, IV range foods are an excellent alternative, since they are sold ready for consumption or need minimal preparation. Therefore, the objective of the present work was to implement a HACCP (Hazard Analysis and Critical Control Points) system, in a minimally processed vegetable industry, and to make this possible, hygiene prerequisites, control measures will be developed , the determination and control of the critical control points (CCP), preventive and corrective measures, a traceability system for the control and monitoring of the product and the creation of a documentation
